Overview

Analyzing Dairy Products

Bruker Optics presents a broad spectrum of dairy analysis tools, from compact, touchscreen-ready dedicated devices to multi-channel analyzers, catering to a comprehensive range of dairy samples and automated in-process systems for closed-loop management. They’re equipped to swiftly examine any milk or dairy product, irrespective of its consistency.

Bruker Optics’ FT-NIR analyzers in the dairy domain typically measure factors such as fat, protein, lactose, moisture, total solids, and more. Additionally, they confirm product identity/quality and ensure batch uniformity. Regardless of the sample state – liquid, semi-solid, or solid – quick analyses can be conducted at various stages: in labs, at-line adjacent to production, or inline within the process itself.

Every dairy analyzer from Bruker Optics comes with specific calibrations tailored for individual products, ensuring swift and effective deployment. These include:

  • Different varieties of milk: raw, skimmed, processed, and condensed
  • Whey varieties and their concentrates
  • Cream forms and whey cream
  • Concentrates of whey protein and lactose
  • Permeates and retentates
  • Various milk powders: skim, whole milk, and whey
  • Cheese assortments: soft, hard, sliced, processed, white cheese, curd, and more
  • Butter types: with and without salt
  • Dairy desserts: yogurts, ice creams, and milk beverages

For milk evaluations, the MIRA stands out as a pre-calibrated instrument geared towards efficient quality control of raw, processed milk, whey, or cream. Meanwhile, the GLOBULYSER offers a convenient way to gauge the homogenization efficiency in milk and related products, by keeping track of free flow within milk.
